Last week, the demonstration kitchen at the Culinary and Events Center was filled with excitement as Chef David Seaton, a visiting chef from Sodexo, shared his expertise with students in the CUL 222-Specialty: International/American Cuisine course. Known for his deep appreciation of Asian cuisines, Chef Seaton shared a Laksa soup that was full of rich and aromatic flavors.
Laska, is a popular Southeast Asian dish, and is known for its well balanced blend of spices, coconut milk, and shrimp. During the session, the Chef showcased how to craft the perfect bowl of Laksa, emphasizing the importance of balancing spices such as lemongrass, galangal, and chili paste to achieve its signature taste.
The event concluded with a tasting, where guests savored bowls of the vibrant, rich soup, complete with rice noodles, and a variety of toppings such as Thai basil, crispy onion, bean sprouts, etc. Chef Seaton’s visit was more than a cooking lesson-it was a celebration of global culinary culture and a reminder of the power of food to bring communities together. This event was created as a result of a heightened connection between SUNY Broome Hospitality Programs Department and Binghamton University Dining Services.
